It is with great excitement we announce our latest offering at The Brasserie at The Marker. As “BubbleClaws” was a perfect summer pairing, our “Beef and Bordeaux” is definitely made for winter.
Irish beef is held in the highest esteem around the world because of the integrity and passion of Irish farmers in raising cattle. Since opening our doors, our culinary team have chosen John Stone beef because they epitomise all that Irish beef is famed for. The benefit if this is the unique and delicious flavour of the beef, and so it was an obvious choice for Beef and Bordeaux at The Marker.
Designed for two people, a John Stone Tomahawk Rib Eye is served with all the trimmings, gratin dauphinois, forest mushrooms, glazed shallots, crushed celeriac and a bordelaise jus. This is accompanied by a bottle of Chateau Courbian, Medoc, 2009, a bold Bordeaux wine that compliments the umami in the meat.
Also included in the experience is Braised Pork Cheek to start and a shared dessert of our very unique Purple Velvet Cake.
Beef and Bordeaux was designed with red wine and steak lovers in mind, it guarantees that feeling of pure contentment.
