American Style Pancakes

This recipe serves four people


Cinnamon butter:



  1. Separate the eggs by putting the whites in one bowl and the yolks in another. Add the flour, baking powder and milk to the egg yolks and mix till a smooth batter. Whisk the whites with the salt until they form stiff peaks. Fold into the batter.
  2. Place a non-stick heavy based on a medium heat. Pour a little oil in pan. Pour in a little pancake mix and cook for two minutes on each side until golden brown and the pancake is firm to the touch
  3. To make the cinnamon butter, leave the butter out of the fridge to soften and with a whisk the soft butter, cinnamon and sugar together.
  4. Grill the streaky bacon to serve on side
  5. Place the cooked pancakes in the centre of a plate; arrange the mixed berries on the side. Place the cinnamon butter on the top of pancakes and place the bacon on the top. Serve with the maple syrup on the table so your guests can help themselves
