This recipe serves four people
Ingredients
- 275g chopped bitter chocolate
- 275g unsalted butter
- 400g caster sugar
- 1 teaspoon vanilla extract
- Pinch of salt
- 5 eggs
- 200g sifted flour
- 50g chopped milk chocolate
Vanilla cream
- 250mls cream
- Vanilla extract
- Pinch of sugar
Blackberry compote
- 2 punnets blackberries
- 2 tablespoons maple syrup
Method
Vanilla cream
- Whip with a whisk until you get soft peaks, put in the fridge until ready for use
Blackberry compote
- Put the berries and maple in a small pot and boil until berries start to break down
Brownies
- Heat the oven to 150 degrees or gas mark 3
- In a large bowl set over simmering water, melt the chocolate and butter together. Whisk in the sugar, vanilla and salt
- Beat in the eggs one at a time until combined, fold in the sifted flour and 50g chopped milk chocolate
- Pour into a shallow baking dish lined with baking paper
- Cook for 20 minutes until cooked on the outside and still a little soft in the middle
Chef's tip
- This compote will work with whatever berries you like
- Try to use a good quality dark chocolate - 60% or more
- Perfect dish to make in advance for a dinner party
