Ingredients
- 1kg of large crab claws
- 60ml extra virgin olive oil
- 2 garlic cloves, finely chopped
- 4 shallots, finely chopped
- 2 fresh chilli, chopped
- 200g ripe tomatoes
- 1 bunch of chopped coriander
- Juice of 1 lime
- Sea salt and freshly ground pepper
- Serve with some grilled sourdough sour bread
Method
- Place a large pan on a medium to high heat, add the olive oil, carefully add the tomatoes.
- Sauté for 2 minutes until the tomatoes start to break down
- Add the garlic, shallots and chilli, continue to cook for 3 minutes
- Add the crab claws and lime
- Cook for 3 minutes until the crab claws have warmed through
- Add the chopped coriander and season with salt and pepper
