Our food and beverage teams have two mottos, the first is to always look for ways to evolve and the second is good food only comes from fresh ingredients.

As the famous quote from Viriginia Woolf poetically says, food is really at the heart of it all – it is what nourishes us and sustains us. At The Marker we keep this at the forefront when preparing food for our guests. We understand that food is to be enjoyed and savoured, but also it needs sustain us and this is why we strive to use locally sourced where possible but always non processed fresh produce. Our culinary team go to great lengths in researching the fresh, ethically sourced ingredients. They search for suppliers that are as passionate about growing as our team are about cooking.




In the four years since opening our doors, we have evolved our food and beverage offering at The Marker through listening to our guests and looking for new ways to innovate. These efforts have transpired in our Le Drunch each Sunday, our clean eating Equilibrium programme which can be seen on menus in each of our outlets and in the ever changing array of cocktails. When developing our ideas, we look at what our guests have told us, emerging international trends and at all times, sticking to the philosophy that good food is simplicity executed perfectly. Our team pride themselves on having an instinct on flavour, matching ingredients and techniques to create bold, innovative dishes and drinks. 

Knowledgeable, friendly and warm are our three criteria that we believe are key to delivering a true professional level of hospitality. Our service team know our guests and our culinary team know our food, both teams regularly meet to exchange insights on each area of their expertise. This translates that each member of the team having a keen sense of our guest’s expectations and how these can be exceeded through our service and our food.

The road in front of the hotel will be closed for essential road works from Monday May 22nd until Friday May 26th. Our temporary hotel set down area will be available on Forbes Street (outside Lolly and Cooks) where our valet parking service and taxis will operate as normal.
