Jumbo prawns with ginger, lemon and turmeric, green fried rice

As seen on TV3’s Six o’Clock Show on Wednesday November 1st.


This recipe serves 4 people as a main course

Ingredients
 
Green rice 
Method 
  1. Green rice- In a smoking hot wok, add the egg and quickly stir fry, add the rest of the ingredients except the rice and coriander and stir fry for two minutes, add the cooked rice and cook for a further three minutes, finish with the chopped coriander,   
  2. Prawns: peel and devein, place in a bowl with the ginger, turmeric, garlic, coriander and chilli. Place a pan on a high heat and when hot add the olive oil. Sauté the prawns for two-three minutes, add the finely chopped carrot, finish with the lemon juice and a little more olive oil.
