This recipe serves 4 people as a main course
Ingredients
- 16 king prawns
- 1 knob ginger grated
- ½ tbsp turmeric
- 1 clove of garlic
- 1 chilli deseeded and diced
- 1 lemon juiced
- 2 tbsp olive oil
- 2 carrot cut finely into match sticks
Green rice
- Cooked jasmine rice
- 2 eggs
- 2 tablespoon oil
- 2 tablespoon garlic - chopped
- 3 spring onions - chopped finely
- salt and pepper
- 4 tablespoon chopped coriander
Method
- Green rice- In a smoking hot wok, add the egg and quickly stir fry, add the rest of the ingredients except the rice and coriander and stir fry for two minutes, add the cooked rice and cook for a further three minutes, finish with the chopped coriander,
- Prawns: peel and devein, place in a bowl with the ginger, turmeric, garlic, coriander and chilli. Place a pan on a high heat and when hot add the olive oil. Sauté the prawns for two-three minutes, add the finely chopped carrot, finish with the lemon juice and a little more olive oil.
