Lobster and champagne lovers will be delighted to hear that our BubbleClaws offering is back by popular demand this summer! This year’s menu has been upgraded with additional courses and Bollinger champagne.
Our Executive Head Chef Gareth Mullins and his team work with local fisherman across Ireland bringing the very best Irish lobster directly to our award-winning Brasserie. Speaking about BubbleClaws Gareth says, “Pairing great Irish shellfish with champagne brings together world class food and drink - a perfect marriage of taste between Ireland and France! We love to champion home-grown Irish suppliers at The Marker and BubbleClaws is a perfect example of this.”
Designed for two, BubbleClaws includes a bottle of Ayala champagne, flame grilled blue lobster, heirloom tomato salad, summer truffle & parmesan fries, garlic & black pepper crème fraiche priced at €120.00 per couple. This year, we are excited to have expanded the menu offering two additional options for guests. The ‘Indulgence’ option offers a starter of Casteltownbere king scallops with Irish asparagus and dillisk butter along with the lobster main course as above and a bottle of Bollinger Brut Champagne priced €180 for two people sharing. The third option is called ‘Decadence’ which is a build on the Indulgence option by adding a dessert of Wexford strawberries & Valrhona chocolate sauce and two glasses of Bollinger Rose Champagne in addition to a bottle of Bollinger Brut Champagne priced €220 per couple.
