Healthy Appetite is a brand new cooking show presented by health food advocate Pamela Flood. Introduced to RTÉ's show line-up in April 2018, the show sees some of Ireland's most renowned chefs go head to head in a weekly culinary challenge to present "healthier" versions of their most loved signature dishes to a panel of judges. Passionate about healthy, balanced eating, our Executive Head Chef Gareth Mullins takes on the challenge with gusto in episode five of the show.
Each week, two chefs serve up their original signature dishes for scrutiny by dietitian Aveen Bannon, food critic and restauranteur Ross Golden Bannon and Michelin Starred Chef Adam Byatt. Analysing the dish on calories, sugar, fibre and fat content, the chefs will then be asked to enter the "Healthy Appetite" kitchen together to re-think their dishes and present more nutritionally balanced versions to the judges. In episode five, our Executive Head Chef Gareth Mullins prepares his mouth-watering venison loin with cauliflower, capers, grapes and tarragon alongside Jess Murphy of Kai restaurant in Galway whose lamb chops with whipped ricotta and muhammara will be tough to beat.
Improving the dish's nutritional value while keeping flavour may be tough but is not impossible as many of the judges discover. Tune into "Healthy Appetite" every Wednesday from 8.30pm on RTÉ One or catch up on the RTÉ Player.
